4 White Onions
1 ½ cups Vinegar
1 ½ cups Water
2 ¼ cups White Sugar
4 tsp. Salt
1 ½ cups Miracle Whip
3 tsp. Celery Seed
Cut onions in half from root to top. Place flat side down on cutting board & thinly slice into half rings. Separate rings and put into a bowl.
Combine next 4 ingredients in a cooking pot & bring to a boil. Pour hot liquid over the onions; cover & place in fridge a minimum of 4 hours. (I leave overnight).
Drain onions very well
Mix Miracle Whip and Celery Seed together, then stir into drained onions, mixing well. Refrigerate until serving time.

Ballymaloe Almond Tarts
2/3 cup unsalted butter
½ cup granulated sugar
1 cup ground almonds
Topping
½ cup 35% cream
1 tsp granulated sugar
1/4 cup redcurrant or seedless raspberry jelly
2 170gran pkgs. fresh raspberries
Preheat oven to 350 F. Lightly spray a nonstick 24 cup mini muffin pan
Beat butter with ½ cup sugar and almonds, using a wooden spoon, in a medium bowl until creamy. Scoop 11/4 tsp of the mixture into each muffin cup. Batter will spread when baked.
Bake in center of oven until shells are brown and crisp, 20 minutes. Let stand in pan for 2 min., then remove shells to a wire rack, using a offset spatula or small spoon. Cool completely about 20 minutes.
Beat cream with 1 tsp sugar, using an electric mixer on medium, until stiff peaks form.2-3 minutes.
Microwave jelly in a medium bowl till runny, about 30 seconds. Gently stir raspberries into jelly until coated. Arrange 3 or 4 raspberries on each tart shell. Top with 1 tsp whipped cream. Serve immediately.

Chocolate Fudge
1 1/3 cups sugar
2/3 cup carnation evaporated milk
2Tbsp Butter
½ tsp salt
2 cups mini marshmallow
1 ½ cups chocolate chips
1 tsp vanilla
½ cup chopped nuts if desired
Line an 8x8 pan with wax paper
In a saucepan, combine sugar, milk, butter and salt. Bring to a boil over medium heat. Boil 4-5 minutes till it starts to thicken. Remove from heat. Add remaining ingredients. Stir till it melts and blends. Cool in fridge. Cut into 1 inch squares.

Eatmore Bars
½ cup brown sugar
1 cup corn syrup
2 cups marshmallows
2 cups chocolate chips
1 cup peanut butter
¼ tsp vanilla
2 cups crushed peanuts
Line a cookie sheet with tin foil and lightly mist with Pam.
Boil sugar and corn syrup. (boil 1 full minute) then add marshmallows, chips, and peanut butter. Stir until melted. Add vanilla and nuts. Mix together and press into cookie sheet. Cool then cut into bars.
Carrot casserole 3 or 4 cups of sliced carrots ( cook till almost done) ¼ cup margarine ½ cup chopped onions Cook onions in margarine until they are soft and transparent Add to cooked carrots in a casserole dish. ¼ cup flour 1.5 cups milk 1/3 cups of grated cheese or cheese whiz Combine milk and flour and heat over low heat until thickened .Add cheese and pour over carrots, Melt 3 Tbsp margarine and mix with 2 cups crushed corn flakes. Spread over carrots Bake @325 for 25 minutes.
